Last Saturday plans changed in an instant. The baby-sitter got sick. Too late to cancel my appointment. Time to call in re-enforcements. I called Julie.
Julie works full-time and has a 2-year-old, so Saturdays are not her ‘day-of-rest’. But she came to my rescue and agreed my children could spend the morning with her. She also said that she had homemade cookies to give me.
“Uh-huh. Now what do I do?” I thought. The angel is caring for my kids and feeding us. I had a big-time debt. I searched the cupboards. What reasonably-acceptable thank you gift could I whip up in one hour? I turned to my cranberry cookbook: Recipes for Sweetened Dried Cranberries. The book’s recipes are simple and straight-forward. More importantly, they’re good, and some of them are really fast to make. With cranberries, I could make something sweet, colorful and fruity without having to trouble with preparing fresh fruit I didn’t have. I generally keep sweetened dried cranberries on hand because they’re a quick, healthy snack that my kids like. Now I needed those cranberries in the cupboard for an emergency baking operation.
I found a recipe for Applesauce Cranberry Cake. It would only take 45 minutes to bake, plus would use up the applesauce in the refrigerator that my children lost interest in last week.
From the looks of it, the cake turned out well. It sure smelled good! However, I did not have the gall to cut a slice and photograph it for this post. The cake was a gift after all.
I’ll just have to make it again and try a piece. Julie was most appreciative of the cake. And I sure appreciated her emergency mommy rescue. Thanks, Julie.
