Frosted Pecans

  • ½ cup brown sugar
  • ½ cup sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 pound pecans
  • 1 egg white
  • 1 Tablespoon water
  1. In a bowl mix together, brown sugar, sugar, cinnamon, nutmeg and salt.
  2. Place pecans in another large bowl.
  3. In a separate small dish combine the egg white and water.
  4. Pour egg and water mixture over pecans and mix well.
  5. Pour dry ingredient mixture over pecans and mix until all pecans are well coated.
  6. Spread pecans on a cookie sheet.
  7. Bake 1 hour at 250 degrees, stirring every 15 minutes.

This year we here in southern Wisconsin are treated – not to a “White Christmas”- but rather a warm day with green grass and a little rain.  Unusual at best.

Here in Wisconsin winter is usually a bit longer than some of us would prefer.  But this year in mid-December the temps are in the 40’s.  There is no snow on the ground.  Walks outdoors around the neighborhood are pleasant.  And each pleasant day like this gets us one day closer to March.

Snickerdoodles are best made with the help of a 5 or 6 year old assistant.

Here is the Betty Crocker version of the recipe for Snickerdoodle cookies:

Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup butter or margarine, softened
  • 1/2 cup shortening
  • 2 eggs
  • 2 3/4 cups Gold Medal™ all-purpose or unbleached flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 2 teaspoons ground cinnamon
 Directions
  • 1. Heat oven to 400ºF.
  • 2. Mix 1 1/2 cups sugar, the butter, shortening and eggs in large bowl. Stir in flour, cream of tartar, baking soda and salt.
  • 3.  Shape dough into 1 1/4-inch balls. Mix 1/4 cup sugar and the cinnamon. Roll balls in cinnamon-sugar mixture. Place 2 inches apart on ungreased cookie sheet.
  • 4.  Bake 8 to 10 minutes or until set. Remove from cookie sheet to wire rack.

Operation Gratitude

Christmas Old School Style- St. Nicholas Day!

6003-pewter-figurine-old-world-santa-LI lived in Germany when I was a younger and my family has retained some of the traditions that we learned during our stay there. When I was a kid my favorite German tradition was St. Nicholas Day because…presents! What kid isn’t in love with presents? On the night before St. Nicholas Day, I would put my shoes by the door and hope for a visit from friendly St. Nick. He would usually bring candy and small toys. It was like having a small taste of Christmas a few weeks early.

What is St. Nicholas Day?

As I started doing some research on St. Nicholas Day, I realized my previous understanding of the holiday – shoes = candy – is extremely shallow. St. Nicholas, after all, was a saint- he had to do something great to get that title, right? The story of St. Nicholas says that he was a rich child whose parents died in an epidemic. Instead of squandering his parents’ money on an iPhone 6 and pizza delivery, like I probably would have done, St. Nick gave his parent’s riches to needy people. Stories say that St. Nick protected children, cured famine, and even prevented ship wrecks. You can read these stories and more at StNicholasCenter.org.

Cranberry Cocktail- When you think of cranberry cocktails, don’t limit yourself to the cosmo. Cranberries provide a hint of tartness that is welcome in many Christmas cocktails. This white Christmas sangria for example, looks festive with red cranberries and a Christmas tree-like rosemary sprig for a garnish!

Cranberry Trail Mix – You can use dried cranberries in place of raisins in just about any situation, and in Wisconsin we like to add them to trail mix! This gourmet trail mix can be purchased by the case so you can hand it out to all of your friends during the holidays.

Cranberry Chutney – Wisconsin Wilderness Cranberry Chutney flies off the shelves during the holiday season in Wisconsin and it’s easy to see why. It makes a colorful side dish and tastes great on chicken or apples but in my opinion, the best way to serve it is on top of baked brie!

Cranberry Bliss Bars- I make these every year for Christmas. A cranberry bliss bar is a blondie with cream cheese icing, cranberries and white chocolate. It was originally made popular by Starbucks, but I did a side by side taste test and my homemade version knocks the store bought version out of the park. Find the recipe here.

Cookie Exchange Tips and More

cookie-exchange-1Today the Wisconsinmade.com staff had our second annual cookie exchange! Let’s face it, getting your coworkers gifts is awkward. If you get one for one coworker, you have to get one for EVERY coworker. It’s also super, crazy, insanely busy at Wisconsinmade.com during the holidays. We’re so busy helping others with their Christmas gifts that we sometimes forget to take care of our own gift shopping. So for these reasons, and many others (including the general awesomeness of cookies and the desire to feed our hungry husbands/boyfriends) we opt for the cookie exchange.

The cookie exchange rules are simple, in fact, they are more like guidelines. We bake enough cookies for about six small cookies per person. Then, we e-mail our cookie exchange coordinator Marilyn to let her know what kind of cookies you are making so people don’t double up.  As company President, Linda gets first dibs on making Russian Tea Cakes from the Betty Crocker cookbook.  Beverly uses her seniority to claim the peanut butter cookies with the Hershey kisses on top. Also, someone MUST make Oreo Truffles, Hannah in customer service took on the challenge, with great success I might add! Next, we package the cookies in individual servings. Plastic baggies are acceptable, bonus points for festive plastic tupperware or Christmas plates! The term “cookie” can also be interpreted to mean brownies, fudge, candy, chocolate dipped pretzels…pretty much anything sweet and festive. For those of us who can’t bake, store bought cookies are acceptable. Christine from customer service brings in cookies from the New Glarus Bakery and they are a welcomed addition to the cookie assortment!

There’s been talk in the news lately about the ridiculousness of Black Friday. Many stores have let Black Friday cast a shadow of Thanksgiving. When did a day of thanks turn in to a day where we trample each other for new TVs and smart phones? It’s a sad situation, but I see a glimmer of hope as my Facebook and Twitter news feeds fill with mentions of Small Business Saturday, the day when shoppers descend on local shops to buy Christmas gifts. If you’re not sure where to go, I’ve listed a few of my favorite Wisconsin small businesses for food gifts and the place online where you can find it all in one spot.

The artists at Embossed Edibles use cookie molds that they have collected over the years to create exquisite handpainted cookies. I like Knight’s Gourmet Popcorn for two reasons, first, there’s something fun about eating popcorn out of a giant tin, and second, they have a fun story about how they got started. Ted Knight had a popcorn machine in his living room, and neighbors would knock on his window and he would serve them some popcorn. Now Knight’s Gourmet has their own store in Milwaukee where they sell gourmet popcorn filled tins.
