Blue cheese is a love it or hate it food for understandable reasons. Some people just can’t stomach the idea of eating mold. In case you didn’t know, that’s what the blue is, good old fashioned mold. Which raises the question, how come it’s ok to eat moldy blue cheese and not those fuzzy refried beans leftover from taco night last week? An even more interesting question, what about that moldy brick of cheddar? Is that alright to eat? Buffalo Chicken SandwichThe buffalo chicken sandwich is just one of the many buffalo chicken dishes I’ve put together to satisfy my craving for all things buffalo. The buffalo-fied trend is an easy concept: take the flavors of buffalo hot wings like buffalo sauce, blue cheese, chicken, and celery, and integrate them in to another dish. I’ve cooked up buffalo chicken pizza, buffalo chicken chili and buffalo chicken tacos. The buffalo chicken sandwich is one of my favorites since it makes an easy week night slow cooker dinner or a main dish for a game day party. It’s a bit spicy and a bit messy but a whole lot of delicious!

Not Your Average Quesadilla Recipe

Buttermilk Blue Cheese Quesadilla recipes usually involve tortillas, cheese, maybe some chicken, but this isn’t your average quesadilla recipe. Sure, it has the tortillas and some cheese, but you’ll never guess what kind of cheese. Wisconsin cheese of course but it is Monteray Jack? Cheddar? Colby?  Nope, it’s not the usual suspect- it’s blue cheese. That’s right, I’m sharing a quesadilla recipe that includes blue cheese, beef and spinach. It might sound unusual but it tastes amazing, and it’s not too bad for your wasteline since the blue cheese has a strong flavor and you don’t need a lot of it. So what are you waiting for? Fire up your skillet and make yourself a dang quesadilla!

Cranberry Salad

Mixing up a big helping of cranberry salad provides a much needed break from indulgent foods and cheese and sausage we eat here in Wisconsin, but like cheese and sausage, cranberries are a food of the Badger State- and a healthy food too! Cranberries and spinach provide antioxidants, vitamin C, and fiber just to name a few of the health benefits. Walnuts contain omega-three fatty acids, and blue cheese- well, it’s still cheese- but since the blue stuff is so strong in flavor you can use less of it compared to more mild cheese. Pizza Crust

Pizza lovers have many options for pizza crusts- precooked pizza crust, add water mixes, the pizza dough that comes in the tube… I sometimes even make my own pizza crust with my stand mixer, but the easiest and tastiest option is buying a crust from a pizza shop.  Most pizzerias will sell you a pizza crust for $2 or less, and some will even roll it out for you.  But don’t be afraid to roll it out yourself, it’s not that hard to do.  You don’t even have to throw it up in the air, just pull and pat the dough until it is the size you want.
