“Celebrate your life,” encouraged the sign outside the photography studio. Attractive images of healthy, smiling people lined this clean, store-front window. At this store, moments of human happiness were digitized and now hung large, still and frozen on glass.
I paused a moment at my reflection. Was I celebrating my life?..I guess so. I was here, up early, exercising in cold, fresh air. This chill in my nose, the sun’s light in my eyes, and the tired muscles in my legs said I was alive. Celebrating though? Was I?
“Yes,” I decided. How did I know? What told me? My stomach. I was hungry. I had not eaten in 13 hours. My stomach called for food, – not cheap, sweet or greasy food, – GOOD FOOD. It didn’t have to be gourmet or fancy. Plain and simple would do. But it had to be soon.
My body demanded nourishing food because my body was living and my body insisted it go on living. So many tomorrows it anticipated, all starting with today, now, in this living moment, not one of those past moments, frozen on a window. “Right now!” it said,”Get busy! Move!” My hunger within was large. “Bring on the food!” it ordered. I obeyed and directed my legs toward the kitchen.
Years ago a friend, who is a physical therapist, was trying to encourage a nursing home patient to get out of bed. This patient had grown disgusted with living. She no longer saw the point in the effort. Cranky from pain, she just wanted to be left alone and grump.
“Get out of bed!” my smiling friend urged.
“Why should I?!” demanded the old lady. My friend thought a moment.
Then she answered brightly, “To eat breakfast!” And the old woman started to laugh…And she got out of bed.
Perhaps nothing so signifies a life in celebration than enjoyment of breakfast. What stronger way to affirm one’s life than to nourish it, – especially at the fresh start of a brand new day?
So in this spirit of healthy breakfasts and life celebrations, here’s a recipe for a spicy, low-carb quiche called Eggs Mexican Quiche. The recipe is courtesy of the Hill Street Bed and Breakfast in Spring Green, Wisconsin. This recipe is one within a collection of recipes and breakfast menus called Morning Menus, Inn Style, published by the Innkeepers of the Wisconsin Bed and Breakfast Association. Each page describes a different Wisconsin inn, lists the inn’s signature items on its breakfast menu, and gives a breakfast recipe which put the inn on the Wisconsin map. Yes, I do believe that these are the special Wisconsin folks who know how to celebrate life in the morning, Wisconsin-style.

Eggs Mexican Quiche
Taken from Morning Menus, Inn Style
- 5 large eggs
- 1 can (4 ounces) chopped green chiles
- 1 cup small curd cottage cheese
- 1 cup shredded cheddar cheese
- 1 tomato sliced
- 1 large mixing bowl
- 9-inch glass pie plate
- Baking time: 30 minutes
- Baking temperature: 375 degrees
Combine eggs and green chiles in large bowl, add cheeses then pour into well-greased pie pan. Bake at 375 degrees for 10 minutes then add sliced tomato and continue baking another 20 minutes until knife comes out clean. Let sit 5 minutes before serving. Makes 4 servings.
