The Joy Cardin Show on Wisconsin Public Radio’s Ideas Network recently had a segment discussing items that are made in Wisconsin.  I was the guest and discussed with Joy and her listeners many of the high quality products produced in Wisconsin and featured on Wisconsinmade.com.  We even had a chance to discuss this blog, Edible Antics.  You can listen to the program at the Joy Cardin Show archives.

We continue our Wisconsin County Edible Antics online culinary tour this week in Jackson County and Jefferson County Wisconsin.  Both counties have much to offer the visitor for their comfort and enjoyment.

Dunn and Eau Claire County Edibles

This week’s Wisconsin county culinary tour visits Dunn and Eau Claire Counties.  Interesting not only are they next to each our alphabetically but they are also next door neighbors.

Dunn County

Dunn County is 852 square miles and is home to about 44,000 people.  County seat is Menomonie.  Some of the villages in Dunn County include:

  • Boyceville
  • Colfax
  • Downing
  • Elk Mound
  • Knapp
  • Ridgeland
  • Wheeler

The University of Wisconsin – Stout campus is located in Menomonie with many outstanding career focused majors.  The Chippewa River is an excellent recreational resource and flows through the south east corner of the county.  The Red Cedar River and state trail run north and south through much of the county.  The county is blessed with a number of state hunting and fishing grounds that attract visitors and fans.

Edible Antics recommendations located in Dunn County include:

  • The Grain Bin market and bakery near Boyceville stocks bulk supplys of grains and baking supplies and also has fresh baked goods to take home
  • Sailer’s Cut Rite meats in Menomonie for local meats
  • Jake’s Supper Club on Tainter Lake five miles north of Menomonie features three outdoor decks overlooking the lake, live music on weekends and 20 beers on tap.
  • Zanzibar restaurant and pub in historic downtown Menomonie
  • The Waterfront restaurant on Lake Menomonie offers outdoor seating in the summer with great views of the lake
  • Lucette Brewing company is a small batch craft brewer with interesting brews
  • Legacy Chocolates in Menomonie for expresso and hand dipped chocolate truffles

Eau Claire County

About 99,000 people live in the 637 square miles that is Eau Claire County.  The County seat is in Eau Claire.  Other cities in the county include Altoona and Augusta.  Villages include Fairchild and Fall Creek.  The Eau Claire River merges into the Chippewa River in the city of Eau Claire.  The city is home to the University of Wisconsin – Eau Claire campus, the Chippewa Valley Museum and the Paul Bunyan Logging Camp.  .  The county straddles an area where the agricultural lands of southern Wisconsin transition into the forested north woods of Wisconsin.

Edible Antics recommendations in Eau Claire County include:

  • Otter Creek Inn bed and breakfast in Eau Claire.  Here is their recipe for Easy Blonde Brownies from the Wisconsin Bed and Breakfast cookbook:

Easy Blonde Brownies (makes 12 servings)

Ingredients;

  • 2/3 cup margarine
  • 2 cups brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups of flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 to 1.5 cups semi-sweet chocolate chips

Preheat oven to 350 degrees F and grease a 9X12 inch baking dish.  Melt the margarine in a saucepan over low heat.  Add the brown sugar and stir until melted.  Beat in the eggs, vanilla, flour, baking powder and salt.  Spread the batter into the prepared baking dish and top with chocolate chips.  Bake for 25 minutes.

Blonde Brownies are said to have been invented before traditional brownies.   January 22 is National Blonde Brownie Day.

If you are lucky enough to go the Green Bay for a Packers game you are well aware of the traditional tailgating efforts of the fans of America’s greatest team.  Steaks, brats, burgers, fish, shrimp are all grilled and washed down with various adult beverages.  The clouds of smoke drifting over the parking lots smell wonderful.

Cranberries, Apples and Barbeque, Oh My!

The fall harvest festivals in bountiful Wisconsin continue this weekend.  The weather is forecasted to be a beautiful late summer early fall sampling of delight.  So what’s your pleasure?

Gays Mills Apple orchard

The city of Gays Mills in southwestern Wisconsin along with a number of area apple orchards celebrate the Gays Mills Apple Festival.  Saturday and Sunday both have scheduled events for the whole family.   This part of Wisconsin is the drift less region where it was not subjected to the glacial smoothing of the north eastern part of the state.  As a result there are picturesque hills and valleys with twisty roads and overlooks.  The ridges above Gays Mills are home to a number of apple orchards that welcome you with their offerings of apples, turnovers, cider, donuts and a sampling of dairy products from the area.

The area in central Wisconsin around Warrens hosts their annual Cranberry Festival.  Cranberries are a major agricultural product for Wisconsin and we rank number one in production with over 60% of the nation’s total output harvested here.  This festival in Warrens celebrates all things cranberry with over 1.300 artisan display booths that stretch out over three miles.  You can take tours of nearby cranberry producing bogs, explore the large arts and crafts fair or sample cranberry themed food products.

There is also a Swiss influenced Octoberfest in New Glarus along with other October fests in a large number of communities throughout Wisconsin.   Or the Beef-A-Rama in Minocqua.  Or the Brew-B-Que in Lodi.  The Travel Wisconsin website is a great resource to find happenings in your area.

Everything is better with bacon, right?  Fall in Wisconsin is starting and it is the season of festivals.  Many of them food related.  We will cover some of them over the next few weeks.  This weekend it is the River Falls Bacon Bash.  This festival features all things bacon, pig-themed activities, live music, merchandise from local artists and bacon vendors over the September 19-20 weekend.  There will be sampling of bacon related products from River Falls restaurants and food vendors.  About 40 vendors will be showcasing their products such as specialty sauces, ice cream, arts, crafts and novelty items.

The Kinnickinnic River is a world-class trout stream with over 8,000 trout per mile in some stretches. The “Kinni” flows through the City of River Falls and provides a beautiful backdrop to the Bacon Bash.

All over Wisconsin you can find small meat markets that supply local residents with fresh beef, pork, chicken, fish and game meats. Bacon is a staple for most of them.

Labor Day weekend.  It’s the start of high school, college and professional football season.  Cities all across Wisconsin have the dedication and verve to attend their home town high school football games on Friday nights.  And Saturday the college teams from UW Whitewater to UW La Crosse  and of course the University of Wisconsin Madison Badgers engage in gridiron battles.  On Sunday (usually) the Title Town Green Bay Packers carry on the historic honor of the only community owned team in the NFL.

Well a large part of all these fans traditions relates to the fine art of “tailgating.”  Hours before the game actually begins fans gather in parking lots, parks and homes to eat, share the excitement and prepare for the game. The coolers full of various beverages, the dips and chips, the veggies and fruit with assorted dips and of course the mandatory burned meat.  Mostly sausages and hamburgers but occasionally steaks, fish, chicken and more.

Many visitors to Wisconsin find specific meats that become favorites but are not available in their home markets.  Ethic specialties and unique preparations that they miss and wish were available.  Folks, who lived in Wisconsin, went to school in Wisconsin or vacationed in Wisconsin need to access these special meats for their tailgating parties.

Of course there are brats and beer.   But there is also a large selection of more exotic foods.  Shark bites and alligator bites are two of them.

The winners in the annual Wisconsin State Fair meats competition have been announced.  Congratulatins to Tim Haen of Haen Meat Packing in Kaukauna for his first place bacon and another first place for his Jalapeno Cheese Summer Sausage.

It seems everyone agrees that if it has bacon – it’s better.  Wisconsinmade.com agrees and includes a smoked bacon sampler and more from Jones Dairy.  One pound of each – cheerywood smoked and hickory smoked bacon.  Yum!

Authentic Brats

Are your Bratwurst “Authentic”?

It’s grilling season here in Wisconsin.  All summer long and well into the fall football tailgating season we grill things.  Steaks, fish, vegi’s, pizza and of course the sausages known as bratwurst.  But is there only one “authentic” bratwurst?  The debate rages on here in Wisconsin.  Smoked, precooked or fresh?  Boiled in beer before you grill them or put them right on the grill?  But those of us who do not sweat the small stuff enjoy a grand variety of brats.  The texture of the meat varies from a course grind to a finer version similar to that found in hot dogs.  The flavors vary from mild to spicy.  The meats included have various combinations of pork, beef, veal and chicken.  Then some meat artisans add cheeses, mushrooms, apple, cherries or other complimentary items.

Wisconsin hosts a large German Fest in Milwaukee this coming weekend July 24 through July 26 where there will be tons of brats consumed.  This is their 35 year of celebrating all things German – food (brats!), history, music, traditions and more.

The city of Sheboygan, Wisconsin claims to be the center of the bratwurst world and many meat artisans make a version of brats they call “Sheboygan brats.”  But there are many additional varieties available.  See the broad selection of brats offered on Wisconsinmade.com
